Chickpea Crusted Skate

Chickpea Crusted Skate


  • 2 six oz fillets of Skate
  • 1 cup chickpea flour
  • 1/5th cup cold water
  • ½ teaspoon chili powder
  • 1 tablespoon crushed coriander seeds
  • 2 tablespoons Olive oil
  • Salt and pepper to taste
  1. In a bowl mix all the ingredients except the Skate, to make a batter.
  2. Heat the Olive oil in a skillet on medium flame.
  3. Dredge the Skate in the batter and remove.
  4. Slowly place the battered Skate on the skillet.
  5. Cook on one side till crisp.
  6. Flip on the other side and cook until done. 



  • 8 oz baby spinach
  • 1 teaspoon onion seeds
  • 1 piece Thai long chili
  • ½ cup Oyster mushrooms
  • 1/3rd cup Olive Oil
  • Salt 
  1. In a sauté pan, heat the oil.
  2. Add the garlic, onion seed and chili.
  3. Add the oyster mushrooms and sauté for 2-3 minutes.
  4. Add the spinach and sauté for another 30 seconds.
  5. Add salt to taste.


  • ½ cup whole yogurt
  • 1/3rd cup cilantro
  • ½ Thai bird chili
  • Juice of ½ a lime
  • 1 tablespoon chopped dill leaves
  • Salt to taste
  1. Pulverize all the items together in a kitchen-aid.


  1. On the base of the plate, spoon the sauce.
  2. Plate the fish on top of the sauce and cover with vegetables.
